«Έχω σαν σκέψη και σαν στόχο, να συνδυάσω, δύο διαφορετικές ίδιες τέχνες, την τέχνη της μπύρας και την τέχνη του φαγητού και να δημιουργώ μπύρες ιδιαίτερης γεύσης και αρώματος, που να σου συμπληρώνει ή να σου αναδεικνύει το φαγητό.

Από την ενασχόλησή μου με την ζυθοποίηση κατάλαβα ένα πράγμα... ότι μπορείς να καταφέρεις αυτό που σκέφτεσαι, αυτό που ονειρεύεσαι, αρκεί να είσαι γεμάτος με όρεξη για μάθηση και όρεξη για δημιουργία».
